Samosa is a famous Indian tea time snack. It is one of the most relished dishes. Its crispy and crunchy covering makes it even more delicious. The popular vegetarian version contains flour (maida), potato, onion, spices, green chili. It is often eaten with mint, coriander or tamarind chutney.
To make samosa, make dough of flour, salt, oil and water and cover it with a moist cloth. For the filling, heat 3 tbsp. oil, add ginger, green chili, garlic, coriander seeds. Stir fry for a minute, add onion, saute till light brown. Add coriander, lemon, turmeric, salt, red chili, garam masala. Then, add potatoes and stir further 2 minutes. Keep aside this mixture.

Now, make a cone of the dough and fill about one spoon of the potato filling in it. Put these cones in hot oil, deep fry on low to medium till light brown. Once done, then serve them hot with green and tamarind chutneys or tomato sauce.
