Sambar is an Indian lentil soup. It is a common dish of the southern regions of India. The ingredients that are required to prepare this dish are sambar dhal, vegetables like potato, carrot, tomato and beans, chopped onions, green chillies, turmeric pulp and salt. Besides, the other ingredients that are required are coriander seeds, dry chillies, gram dal, fenugreek, asafoetida and oil.
Firstly, add the sliced vegetables, onions, chillies and salt to the dal and boil. Roast the spices in oil and grind it. Add all the ingredients and boil for some time. Add fried and powdered fenugreek and asafoetida. Season with mustard, chillies and curry leaves in oil and finally, add little tamarind water. Serve hot with rice or dosa.
