Rajma Chawal

Rajma chawal (red kidney beans with rice) is an authentic Indian cuisine. To prepare this dish first soak the dry rajma in water for at least eight hours. Boil the beans till they are tender. Grind coriander, cumin, fennel and ajwain seeds to a powder. Heat ghee in a pan and fry ginger. Add red chilli powder, turmeric powder, chopped tomatoes and minced powder and mix well. Now add the rajma, salt and garam masala. Garnish with fresh coriander.
For the chawal, heat water in a pot. Add rice, salt and lemon juice. When the rice is cooked, remove it and drain. Serve hot with rajma. It is a vegetarian delight and is especially prepared in cities like Delhi, Chandigarh and Jaipur.
