Meat Pickle (Kerala)

Pickling meat is a way of preserving different types of meats. This method was developed before the invention of refrigerator. The meat pickles of Kerala are savoured and typically eaten as small pieces with the rest of the meal. It is very easy to make and can be stored for 2 to 3 months in refrigerated condition.
To make it, firstly, cook the meat by adding two teaspoon of vinegar, salt and adequate water to it. In a pan, heat oil and add garlic, ginger, green chillies, and curry leaves. Fry them till it becomes semi brown. Now add the cooked meat and mix thoroughly. Pour more vinegar so that the meat is covered and the meat pickle is ready.
