Dahi Vada

Dahi Vada is an Indian fast food, or chaat, prepared by soaking vadas in thick yogurt (dahi). Dahi Vada can be eaten as a snack. It also complements well with the main dishes.
It is easy to prepare this mouth watering dish. First of all you are required to soak the urad daal in a bowl of water overnight. Grind it into a paste. Add the green chilies and ginger to this paste. Next mix 1 cup of yoghurt with 2 cups of water and salt to taste. Keep aside. In another bowl mix the remaining yoghurt with the red chili powder, chaat masala, cumin powder, sugar and salt to taste. Mix well andkeep aside. Then heat oil. Make round balls of the lentil paste. Fry till light golden. Put them immediately into the yoghurt/water mix. Allow to soak for 2-3 minutes. Then remove from the yoghurt/water mix and press gently between your palms. Now pour the thick yoghurt mix over them to cover completely. Garnish with chopped coriander leaves, Tamarind Chutney and green Mint-coriander Chutney and chill in the refrigerator for a few hours before serving.
