Bishops Weed

Bishops Weed or Ground-elder, as it is known by its common name, is a very famous spice of India. But this spice is not common in other regions of the world. Actually ground elder or carom seeds is mistakenly said as bishops weed (it look likes the weed of bishop plant) but it is different from that. The famous and original name given to this spice is Ajwain. It is quite aromatic but less subtle in taste. It has a bitter and pungent flavor. It is also used as a preservative in pickles. Ajiwain is never used raw it is always fried up or roasted.
