The ingredients that are required to make this dish are 1 large eggplant, 1 tsp turmeric powder, red chili powder to taste, salt to taste, coriander powder, anardana powder and mustard oil to shallow fry.
To prepare Baigun Bhaja, cut the eggplant into ½” thick circular slices. Then in a large flat dish, mix the turmeric powder, chili powder, coriander powder, anardana powder and salt with a little water to make a medium-thick paste. Coat the eggplant slices well with the spice mix. Heat the mustard oil and shallow-fry the eggplant slices till they turn golden brown in color. Serve them hot.
